Foodie Friday: Brown Butter Ravioli

This is one of my favourite recipes, not only because it’s delicious, but also because it looks much more fancy schmantzy than it actually is. Put out your good cloth napkins and decant a bottle of Chianti and your guests will think of you as a culinary superstar rather than as a guy who just tossed a bag of store-bought ravioli in a pot of boiling water when he got home late from work.  

Ingredients:

  • One package of your favourite ravioli- fresh is preferable, but frozen will do. If you’re a showoff, you can make your own.
  • 5 T butter
  • 2 T balsamic vinegar
  • ½ c. freshly grated Parmesan cheese
  • A handful of chopped walnuts
  • Sea salt and pepper to taste

Method:

    1. Boil your water and cook the ravioli until it’s just shy of al dente.
    2. Heat a non-stick pan to medium heat. Cut the butter into small chunks and add to the pan. It will foam for a little bit, then begin to turn a rich, golden brown.
    3. When the butter has browned, add the balsamic vinegar and stir. Add a dash of salt and a little pepper to flavour.
    4. Add the ravioli to the pan and coat fully with the brown butter mixture. I like to leave the heat on for just a minute or so to let the edges of the ravioli just begin to get ever so slightly crisp.
    5. Toss in the walnuts and cheese and serve. Garnish with a little bit of parm over the top.

There you have it- fast, easy, impressive, and cheap. What more could you possibly want?
