Foodie Friday: Pizza Pasta Salad

Looking for a fun salad to bring along to an end of summer barbecue? This Pizza Pasta Salad is a little quirky, but a great alternative to the same old boring pasta salads and always well received.

Ingredients:

  • Pasta of your choice (I prefer penne), cooked al dente
  • 2 ripe tomatoes, chopped
  • 1 cup Kraft Red Pepper & Parmesan dressing
  • 1 cup of shredded mozzarella
  • 1/2 cup shredded Parmesan
  • 1 stick of pepperoni, chopped (or deli sliced pepperoni, cut into quarters)
  • A big handful of basil leaves, roughly chopped

Method:

  1. It couldn’t be easier- mix all ingredients together in a large bowl, let sit for 10 minutes or so, sprinkle a little extra parm over the top, and serve.

I like to use whole wheat pasta to add a little more substance, but that’s a matter of taste. You can play around quite a bit with ingredients (you could add peppers, mushrooms, onions, oregano…) and the result will still be terrific. If you don’t want to use the Kraft dressing, you can substitute olive oil infused with some fresh herbs and just a little bit of tomato sauce.
